Say cheese!

In addition to all the bottles the renters next door gifted us with, they left us with a lot of assorted foodstuffs that they had left over as they headed back to the US.  We aren't proud; as expensive as most food is here, we were happy to get it.  They really must like cheese, as they had a ton of it to give us.  Yum!  So, we've been busy with cheese cookery.  

Last night I made four-cheese mac-n-cheese with brie, smoked cheddar, a mystery hard cheese they left us, and  some white cheddar we had in the fridge.

And tonight we collaborated on a veggie pizza with chevre, plenty of it, onions, and peppers, and Barry's homemade crust.  Mmmmm...I just love chevre.  What a treat!  Accompanied with Cabernet Sauvignon Barry bought me for Christmas, I was in heaven.  I think Barry liked it too, but he was too busy chewing to say much!

Ugh.  Don't you hate it when you write a whole lot of whatever, be it an email or a blog post, hit a key, and it goes "poof"?  Well, that just happened to me.  It's my own fault as I should have been saving all along.  Weebly does not do this automatically, and it's something I am prone to forget when I get on a roll.  I was simply removing a caption for a photo, hit the backspace key, and back I went to the previous page, with all the work I'd done on today's blog entry gone. I tried everything, but it's just gone.  I guess I should start composing these entries in a separate file that autosaves the text, so at least I wouldn't lose that part.  I'll do that from now on, but for today's entry, I'll be brief.  I just don't have it in me to rewrite the entire posting.

Barry installed this magnetic doorstop to keep our front door from SLAMMING shut when the breeze is blowing through. Thanks to our Grand Caribe neighbor Kyle for this useful gift!

We had our windowsills tiled today by the good folks at Grand Caribe -- this will prevent the paint getting gouged when the windows are removed for washing. Plus it looks good too!
I rearranged the living area furniture today.  Now we have an even better view of the sea, which is rightly the focal point of the room.  Here's the old arrangement:

Busy Saturday

Plantains growing right at Grand Caribe
Today was a gorgeous day with east winds again at last, and thus no mosquitoes, after a few days with far too many of the little devils.  Perfect!  We started the morning off with a nice beach walk with Paisley, followed by our traditional "pool down".  Next we rode our bikes into town to pick up some fresh organic produce at Zac's.  We had hoped to stay home today, but he got a new shipment from the mainland last night, so we had to get there to ensure we got some of the bounty.  While in town we made a quick stop in the bakery for a few items from their dollar table (and that's only 50c US, a huge deal!)  

After another pool down, this time in the main Grand Caribe pools as ours had just had the chemicals adjusted, we spent most of the rest of the day indoors, taking care of various business on the computer and cooking.  Since the breeze was so good, we were able to turn off the A/C, open the windows, and feel the breeze blowing through all day long.  Nice!

Barry did most of the cooking as he was finally able to make some of his favorites now that we have our full complement of kitchen items from our shipment.  He baked his energy bars, and also made refried beans with beans he'd cooked in the crockpot, fresh gazpacho, and fresh salsa!  I helped with some of the prep for his dishes; then made bean, corn (fresh off the cob), and cheese tostadas for dinner.  We topped off the meal with a thin slice of Key Lime Pie he'd made yesterday.  It was absolutely delicious.

    We're an adventurous couple, married 27 years, who decided to move to Ambergris Caye, Belize from Chapel Hill, North Carolina for retirement.  We built a condo on the beach  north of San Pedro Town and moved in with our Boston Terrier Paisley in August 2011 and lived there until March 2013.  Ultimately, we decided to return to the US, but we have no regrets and MANY good memories of our time in Belize.  We hope our blog might prove helpful to anyone interested in this lovely country.
